Beef and Macaroni Casserole W / Feta Cheese

For a simple meal try this recipe for a casserole of macaroni and meat just a bit 'different. With coriander, turmeric, lemon juice and feta cheese, this dish will give a touch of refreshingly different to the usual ground beef macaroni casserole. Add the orange almond salad and you have a simple but delicious dish requires little preparation time.

Chicken and Rice Casserole Recipe - Buffalo Chicken Casserole

A tantalizing mix of chicken, rice, blue cheese dressing and buffalo wing sauce.

1/2 cup uncooked regular long-grain white rice

1 cup water

1 tablespoon olive or vegetable oil

1 pound boneless skinless chicken breasts, cut into thin strips

1 cup celery, thinly sliced

1 (14.5 oz.) can stewed tomatoes, undrained

1/2 cup buffalo wing sauce

1/4 cup blue cheese dressing

Directions

Preheat oven to 350 degrees. Prepare an 8-inch square baking dish with cooking spray.

Cook rice in water for 20 minutes as directed on package.

In a large skillet, heat the oil over medium high heat. Add the chicken and celery. Cook for 5 to 7 minutes; stirring frequently until the chicken is no longer pink. Remove from heat.

Open the can of tomatoes and cut up the tomatoes while still in the can. Stir the tomatoes and wing sauce into the chicken mixture.

Spoon the cooked rice into the baking dish. Spread the chicken mixture over the rice - do not stir.

Bake for 25 to 30 minutes or until hot in the center. Drizzle blue cheese dressing over the top.

6 skinless, boneless chicken breast halves, cut into bite size pieces

2 cups milk

2 cups uncooked white rice

2 (10.75 oz.) cans cream of chicken soup

1 teaspoon seasoning salt

Directions

Preheat oven to 350 degrees. Lightly grease a 9x13-inch baking dish.

In a bowl, combine the milk, rice, soup and the seasoning salt; mix well. Pour mixture into prepared baking dish. Add the chicken.

Cover baking dish tightly with aluminum foil and bake for 90 minutes or until the rice is completely done; stir every 30 minutes while cooking.

Uncover baking dish and bake for another 15 minutes to let rice turn brown.

2 cups cooked white rice

2 cups frozen broccoli florets

1 cup onion, chopped

2 cups Cheddar cheese

4 slices soft bread cubes

Directions

Preheat oven to 350 degrees.

Season the chicken with salt and pepper and place in a microwave safe dish. Cover dish and microwave for 5 to 6 minutes. Turn chicken over and cook for another 2 to 3 minutes or until chicken is no longer pink. Let cool.

In a 9x13-inch baking dish, combine the chicken, rice, broccoli, onions, and the soup; mix well. Sprinkle cheddar cheese on top, then bread cubes.

Bake for 20 minutes or until the cheese is melted and bubbly. Bread on top should be crunchy.

Let's Cook Your First Tuna Noodle Casserole Dish!

The Casserole, we all know them, we all enjoy them, what better way to use up some of your leftovers perhaps or save money along with eating healthier since you decided and control which ingredients you want in your casserole. An awesome classic, lots of us remember these from our childhood years? Mom serving tuna, bean, beef, and chicken casseroles that she made in her own kitchen with leftovers?

Making them is simple, dinner, lunch, or even for a movie snack. Learning how to prepare them can be great fun and add to your kitchen skills as well. Here is a family favorite to make yourself:

Tuna Casserole
For over fifty (50) years this has been a favorite in our family.

2 cups macaroni (elbow), al dente, firm
1 cup Velveeta Cheese, cubed (substitute for any cheese that you can cube and melts easy)
2 cans (Large) tuna, drain
1 15 ounce can peas, drain
1 15 ounce can diced tomatoes (plain), including juice
1 teaspoon salt
1/2 cup milk
1/2 cup cornflake crumbs for topping sprinkles
While your macaroni cooks, in a large mixing bowl gently fold following ingredients together: tuna, tomatoes, salt, peas, milk, and eggs. (Note: you might wish to breakup instead of mashing the tuna). Next the cheese should be folded into the mixture.
Drain your pasta and mix into the mix you just made above. Now put it in a 2-1/2 to 3 quart casserole dish. Sprinkle with the cornflakes over the top. Bake in a 350 degree oven for 45 minutes. Yield 6-8 portions.

The nice thing about casseroles is that you can have many variations to one recipe. Start with a basic recipe and add or adjust things to allow you to use up leftovers like broccoli, extra diced vegetables (onion, peppers), add different types of cheese to taste. With each new recipe you come up with you will see what you like the best and least and can discover new combinations from there.

One other thing you can do is look up online, Google casserole or one pot meal, etc. and see what variations they offer. Some sites even have their own videos of the casseroles being prepared for you ease in the kitchen. Experimenting with casseroles in the kitchen can help make you a better all around cook in your home too, you get the experience of trying different foods together for one thing and being able to utilize the leftovers that may have had to be tossed.

CHILI MEATLOAF AND POTATO CASSEROLE / Serves 5

Ingredients

MEATLOAF:

* 1 1/2 lbs hamburger meat
* 3/4 cup onion, finely chopped
* 1/3 cup saltine cracker crumbs
* 3 tablespoons milk
* 1 tablespoon chili powder
* 3/4 teaspoon salt

POTATO TOPPING:

* 3 cup prepared mashed potatoes
* 1 can whole kernel corn with red and green peppers, drained (11 oz.)
* 1/4 cup green onions, thinly sliced
* 1/2 to 1 cup taco seasoned cheese, shredded

How To Put It Together

1. Heat oven to 375 degrees. In large bowl, combine meatloaf ingredients, mixing lightly but thoroughly; gently press into bottom of 9-inch square baking pan, Bake 20 to 25 minutes or until center is no longer pink. Carefully pour off drippings.
2. Meanwhile in medium bowl, combine all topping ingredients except cheese. Spread over meatloaf to edges of pan; sprinkle with cheese. Broil 3 to 4 inches from heat for 3 to 5 minutes or until top is lightly browned. Cut into 6 rectangular servings. Makes 6 servings.

ITALIAN GROUND BEEF CASSEROLE

Ingredients

* 1 1/2 cups macaroni
* 1 1/2 lbs hamburger meat
* 1 small eggplant, peeled and chopped into 1/2 i nch pieces
* 1/2 cup chopped onion
* salt and pepper to taste
* 1/2 teaspoon basil
* 1 cup sour cream
* 1 cup shredded cheese

How To Put It Together

1. Cook pasta according to directions.
2. Brown ground beef and onion
3. Drain off fat
4. Add remaining ingredients and macaroni
5. Put in a buttered casserole dish and bake, uncovered for 45 minutes at 350 degrees.

Simple, economic Tuna Casserole Recipes

Tuna casseroles are one of the cheapest dinners can do. Most children are picky about eating, and most men are too demanding! If you can not think of something to eat, you can bet it will probably have the ingredients to make available most of the time all the favorites:

Classic Tuna Casserole

1 envelope Chicken Noodle Soup Mix 2 1 / 2 gallons of boiling water, 3 tablespoons butter 3 tablespoons flour 1 can tuna 2 cups drained canned peas, 1 / 4 cup butter, bread crumbsPepper

Preheat oven to 450 degrees. In a small saucepan combine soup mix and water to boil. In another saucepan melt the butter over low heat and season the mixture with flour and pepper. Gradually stir in hot broth and cook until thickened. Add tuna and peas times. Pour into a greased baking dish and spread with breadcrumbs. The cooking time is about 15 minutes, until heated through.

Tuna Sticks

1 can of tuna drained 1 can of cream of mushroom soup 2 cups chow mein noodles 1 cup celery,chopped 1 / 4 cup chopped onion 1 / 2 cup almonds or cashews, chopped

Soup mix with 1 / 4 cup of water. Add 1 cup chow mein noodles and other ingredients. Place in baking dish and spread the rest of the dough on top. Bake at 375 degrees for 30 minutes.

Tuna Casserole Dinner

1 (10 ounce) package frozen spinach 1 can of tuna drained 1 small can sliced mushrooms (optional) 2 tablespoons lemon juice 3 tablespoons butter 1 tablespoon chopped onion 2 tablespoons flour 1 / 2 teaspoonSalt 1 / 8 teaspoon pepper 1 egg, lightly beaten

Cook spinach according to package instructions. Drain well. Drain mushrooms, saving liquid. Lemon juice and water to mushroom juice to make 1 cup liquid. Mix all the ingredients except the cheese together in a pot and start with the grated cheese. Bake at 425 degrees for 45 minutes.
