Hot plate in cast iron - grandmother Fried Chicken

Cooking with cast iron is a unique experience. It just makes everything taste better. There is nothing like my grandmother's recipe for Fried Chicken.

I was blessed to learn how to roast chicken to my grandmother in the kitchen with their cast iron pan. The pan had given to her by her mother, my grandmother went to my mother, and now it's mine. I have two daughters, so I'm not sure what happened to her when I'm gone.

This old pan size is 12 inches. It isSeasoned very black and very good. It holds the heat very well. It 'better than any pan is not on the market. Absolutely nothing sticks to it.

I hope you enjoy my grandmother's Fried Chicken. I think about her every time I see his pot.

Grandma's Fried Chicken

January 3 to 3 / 2 pound cut Fryer,

2 tablespoons salt

1 teaspoon black pepper

2 teaspoons garlic powder

All flour, for dredging

Remove the chicken from the refrigerator 30 minutes before cooking. Cold chicken to lower the temperature of your oil.

Wash the chicken pieces under cold water and dry.

Melt enough shortening in a saucepan over low heat for up to 1 / 4 of an inch to the side of the pan. Once dissolved, increase heat to 325 degrees. Not better or chicken and brown.

This allows just a little 'oil penetrate the thickest part of meat to cook all the way home. Then turn and cook for 8 to 10 minutes. This method has never resulted in chicken fat. Simply perfect all the way through cooking.

Drain on a rack in Septemberon a baking sheet.

Fried chicken is great hot, hot, cold or at room temperature.

Chicken salad with pineapple - fresh summer salad, perfect for picnics or the beach

I think for most people, something with chicken, salad impressive. I think a very difficult period, someone does not want (except, perhaps, a vegetarian, but I want to introduce you to them - if they have forgotten or do not know who ate chicken - would have liked). So, this is a pretty good base - I think.

I also think that most people like sandwiches. Mixing the two ..? Sounds good, right? I think so, and you are likely to try this recipe. Let'sgo!

For this dish you will need the following things:
cooked chicken, finely chopped
Salad dressings (mayonnaise is the usual, but use what fits with the chicken).
To taste, salt and pepper.

As you may know, when it comes to salads, there are lots of ways to vary this is (there are a lot of optional ingredients that you might want to try or not). I'll give you some examples of these (as in silence, simply no good reasonall of them, and most importantly, it would take weeks).

Let's start with the vegetables start-things: broccoli, mushrooms, spinach, carrots, peppers (and many others). You can also completely different things, such as olives, crushed fruit, spices that you do not like cucumbers, hard boiled eggs.

Actually, what I've done so far is the basic ingredient in "a sandwich with salad." We go to a chicken salad sandwich real!

They are, in addition toI mentioned as basic ingredients, the following:
cooked chicken - 2 cups, finely chopped
4 green onions, chopped
4 slices of bell pepper
1 stalk celery, finely chopped
1 can of crushed pineapple
Salt and pepper

For the dressing, you must:

Lemon / lemon juice - 2 tablespoons
Mayonnaise - 4 tablespoons

I hope you see the signs of spring where you are. Here in North Texas is very early spring, and not too soon! As I sit here at my computer watching my upstairs window, I see the sun and the green leaves of the trees. If spring is tempted to spend more time outdoors, it can mean less time in the kitchen. Today I wrote a recipe for Chicken Cacciatore Fettucine is healthy and only need about half an hour to prepare and cook. Throw a> Salad or steam some broccoli and meal can be quick, easy and healthy within minutes. (If you prefer to use Splenda instead of sugar, substitute the same amount.)

CHICKEN HUNTER Fettuccine

1 pound boneless chicken breast half
1 / 2 cup chopped onion
1 / 2 cup chopped green bell pepper
1 can (16 ounces) diced tomatoes, drained
1 can (8 ounces) tomato sauce
2 tablespoons Splenda granular
1 1 / 2 teaspoon Italian seasoning
1 / 3 cup sliced ripe olives
1 / 8 teaspoonblack pepper
3 cups hot cooked fettuccine integrals

Cut the chicken breasts 30 to 32 pieces. Spray a large frying pan with canola or olive oil nonstick cooking spray. Fry chicken with onions and peppers for 6-8 minutes. The tomato and the tomato sauce add the Splenda, Italian spices, pepper and black olives. Stir well to combine, simmer the heat. mixture simmer for 10 to 15 minutes, stirring occasionally.

Yield: 6 people1 / 2 cup of pasta and 2 / 3 cup sauce each.

Per serving: 210 calories, 22 g carbohydrate, 21 g protein

How to Make Your Own Chicken Salad

In a small saucepan, combine broth, milk, salt and pepper, stirring to blend. Cook over low heat until very hot.

Chicken and Rice Casserole Recipe - Buffalo Chicken Casserole

A tantalizing mix of chicken, rice, blue cheese dressing and buffalo wing sauce.

1/2 cup uncooked regular long-grain white rice

1 cup water

1 tablespoon olive or vegetable oil

1 pound boneless skinless chicken breasts, cut into thin strips

1 cup celery, thinly sliced

1 (14.5 oz.) can stewed tomatoes, undrained

1/2 cup buffalo wing sauce

1/4 cup blue cheese dressing

Directions

Preheat oven to 350 degrees. Prepare an 8-inch square baking dish with cooking spray.

Cook rice in water for 20 minutes as directed on package.

In a large skillet, heat the oil over medium high heat. Add the chicken and celery. Cook for 5 to 7 minutes; stirring frequently until the chicken is no longer pink. Remove from heat.

Open the can of tomatoes and cut up the tomatoes while still in the can. Stir the tomatoes and wing sauce into the chicken mixture.

Spoon the cooked rice into the baking dish. Spread the chicken mixture over the rice - do not stir.

Bake for 25 to 30 minutes or until hot in the center. Drizzle blue cheese dressing over the top.

6 skinless, boneless chicken breast halves, cut into bite size pieces

2 cups milk

2 cups uncooked white rice

In a bowl, combine the milk, rice, soup and the seasoning salt; mix well. Pour mixture into prepared baking dish. Add the chicken.

Cover baking dish tightly with aluminum foil and bake for 90 minutes or until the rice is completely done; stir every 30 minutes while cooking.

Uncover baking dish and bake for another 15 minutes to let rice turn brown.

In a 9x13-inch baking dish, combine the chicken, rice, broccoli, onions, and the soup; mix well. Sprinkle cheddar cheese on top, then bread cubes.

Bake for 20 minutes or until the cheese is melted and bubbly. Bread on top should be crunchy.

The Elastic Chicken

We’ve all been there… an unexpected bill comes up or you have to drain your savings account for some emergency expenditure. Sometimes, things like this just happen and your food budget is usually the first to suffer because of it. Our family used to live in the country and we didn’t have the luxury of town water. One time our well went dry and we had to spend every penny we had to have another one dug. Of course, this new well had to be deeper than the first which meant the man who did the work dug deeper into our pockets. I started to worry about how we were going to be able to feed the family until I sat down and made a plan. Hence the story of the Elastic Chicken.

I went to our local grocery store who happened to be having a sale on some great Perdue Oven Roaster chickens. I bought one of them that was about eight pounds. I knew my plan and wanted to get the most bang for my buck so I opted for one of the biggest ones they had. That night I fixed Baked Chicken. I simply put little pads of butter on its skin and added a sprinkle of salt and pepper. (I really didn’t have many seasonings to use nor a lot of money to buy any.) We had some mashed potatoes and green beans to go with the chicken and everyone was quite full when we finished dinner. Meal number one was a success! Before I put the leftover chicken carcass away, I picked off as much meat as possible from the bones. I chopped and diced the pieces and came up with nearly 3 cups worth of chicken meat! Hurray! I then took the carcass and placed it into a large storage bag and put it into the freezer.

The next night, I took half of the chicken meat and mixed it with about one cup of mayonnaise. To this, I crumbled up a leftover piece of bacon from breakfast that morning. I also mixed in one celery stalk and one small onion, both chopped up finely. I added a little salt and pepper to taste and served on toasted bread as Chicken Salad Sandwiches. As a side dish, I’m sorry to say we had potato chips. Nothing fancy but it sure did make for a quick and easy meal! I also knew that the next night would knock their socks off!

The third night I made Chicken-Pasta Salad. To make this wonderful meal, I thawed a bag of frozen pea pods in cool water until they were slightly tender then drained them. Next, I boiled about half a box of macaroni adding the pea pods to the water for the last two minutes. After draining the two together, I stirred in a third cup of mayonnaise, a quarter cup of French dressing, a cup of cherry tomatoes cut into halves (regular tomatoes will work but you will need to drain them a bit) and the rest of the leftover chicken meat. Lightly toss everything together and you have an excellent meal that you can serve with some bread and butter on the side. Meal number three was a huge hit!! But wait until you hear about the last meal…

Chinese Recipe For Sesame Chicken Dish

There's something about Chinese food that just attracts people like magnets. Chinese cooking works like magic to turn a normally bland vegetable or meat into a colourful, flavoursome dish. The sesame chicken is a Chinese dish that's popular throughout the world. It's one of the most sought after dishes from Chinese restaurant menus. Not only is sesame chicken tasty to eat; it's also easy to prepare at home. When you're planning a party or family celebration at home, you could prepare this dish as main course. It doesn't take much time to cook and will definitely find a lot of takers.

The sesame chicken is said to have originated from the Hunan region of southern China. Sesame seeds have been a staple in Chinese food since time immemorial. The Chinese have a strong belief in the nutritional value of these seeds; they are said to be a great source of calcium, proteins and essential minerals. Of course, there's also the taste! Sesame seeds enhance the flavour of any dish.

This may not be the perfect dish for weight watchers because it involves deep drying the chicken; but it sure is a wonderful fare to have when you feel like indulging. The combination of crispy fried chicken with tangy sweet sauce and toasted sesame seeds is a treat to the taste buds. So whenever you feel like giving yourself a treat, just try out this simple recipe with ingredients you'll normally have at home. Finish off the cooking part in less than 30 minutes and relish the taste of restaurant-like fare at home.

You'll need -

* Chicken breasts (whole, deboned) - 3
* Sesame seeds - 2 tbsp
* Enough peanut oil for deep frying

Dice the chicken to make 1 inch pieces. Toast the sesame seeds and keep aside.

To make the marinade -

* Soy sauce - 2 tbsp
* Cooking wine - 1 tbsp
* Sesame oil
* Flour - 2 tbsp
* Corn flour - 2 tbsp
* Water - 2 tbsp
* Baking powder - ¼ tsp
* Baking soda - ¼ tsp
* Cooking oil - 1 tsp

Mix all these ingredients and soak the chicken pieces in this marinade for about 20 minutes. While this is marinating, you can prepare the sauce.

You'll need -

* Chicken broth - 1 cup
* Water - ½ cup
* Vinegar - 1/8 cup
* Cornflour - ¼ cup
* Sugar - 1 cup
* Soy sauce (dark) - 2 tablespoons
* Sesame oil - 2 tablespoons
* Chili paste - 1 teaspoon
* Crushed garlic - 1 clove

Combine all these in a pot and keep stirring till the mixture start boiling. Close and simmer to use after you finish deep frying the chicken.

Heat the peanut oil and deep fry chicken pieces, one batch at a time. Drain with paper tissues. When this is done, heat the sauce again till it starts boiling.

Take a serving bowl and place the fried chicken. Cover with hot sauce and garnish with toasted sesame seeds. Traditionally, sesame chicken is served along with boiled jasmine rice and steamed broccoli.

Entree Salads in Minutes - Choose From Tuna, Chicken, Or Ham

Sometimes a person just doesn't feel like a full, heavy meal. When you desire a light meal and don't have a lot of time, turn to one of these quick and easy entree salad recipes. Whether you choose the Wild Rice Salad with Tuna or the Cashew Chicken with Peas, you are sure to have a great salad meal. But if you are looking for a really refreshing salad, try the Fruity Ham and Pasta Salad.

WILD RICE TUNA SALAD

1 pkg (6-oz) long-grain and wild rice mix
1/2 cup mayonnaise
1/4 cup sour cream
1/2 cup finely chopped celery
2 tbsps finely chopped onion
1 (12-oz) can solid white tuna in spring water; drained and flaked
1 cup salted cashews
Lettuce leaves

Cook the rice mix according to the package directions. Add the mayonnaise, sour cream, celery, onion, tuna, and cashews. Stir to mix well. Chill. Serve on lettuce leaves.

CASHEW CHICKEN & PEA SALAD IN 15 MINUTES

1 cup leftover (or deli) chicken, diced
1 pkg (16-oz) frozen peas, thawed
1 can (8-oz) sliced water chestnuts, drained
3/4 to 1 cup unsalted whole cashews
6 green onions, chopped
1/2 cup mayonnaise
1 tsp soy sauce
1/2 tsp ground ginger
Dash of garlic powder

In a large salad bowl, place all of the ingredients and toss well to coat. Serve immediately.

Note: If you are an oddball like me and don't eat chicken, you can substitute chopped cooked ham.

FRUITY HAM AND PASTA SALAD

1 can (11-oz) mandarin orange sections
1 (8 1/4-oz)can pineapple chunks
1 (6 3/4-oz) can chunk-style ham
1 cup corkscrew macaroni, uncooked
1/3 cup salad dressing OR mayonnaise
1 tbsp honey
2 tsp vinegar
1/4 tsp celery seed
2 cups torn salad greens
1 stalk celery, sliced
2 tbsp sunflower seeds, optional

Chill unopened cans of oranges, pineapple, and ham in the freezer for 10 minutes. Meanwhile, cook macaroni according to package directions; drain. Turn macaroni into a bowl of ice water. Let stand for 5 minutes. Drain well.

To make dressing: In a small mixing bowl, stir together salad dressing or mayonnaise, honey, vinegar, and celery seed. Stir to blend well.

Drain fruits and ham. Flake the ham into chunks. In a large bowl, toss together macaroni, orange sections, pineapple, ham, salad greens, and celery. Pour dressing atop the salad. Toss well to coat. Sprinkle with sunflower seeds, if desired.

Baja Chicken Pasta Salad and 2 More Delicious Salad Recipes

Its no doubt that salad goes well with any meal. Baja chicken pasta salad, balsamic dressing and barbecue cubes salad recipes are delicious, easy and quick to prepare.

Below are the 3 recipes for you to try at home:

1. Baja Chicken Pasta Salad

Ingredients:

- 3/4 pound chicken breast
- 6 ounces dried mixed fruit
- 1 cup ring macaroni or orzo - raw
- 1 cup Jicama - cubed
- 2 Green Onions/Tops - Sliced
- 1/2 cup Mayonnaise or Salad dressing
- 2 tablespoons sour cream or plain yogurt
- 1 teaspoon red chili's - Ground
- 1/4 teaspoon salt

Notes: The chicken breast should be boneless, skinless and weigh about 3/4. You should use 1 6-oz package of diced mixed fruit.

Directions;

- Heat enough salted water to cover the chicken breast (1/4 tsp salt to 1 cup of water) to boiling in a 4 quart Dutch oven.
- Add the chicken breast.
- Cover and heat to boiling, reduce the heat and simmer until the chicken is done, about 15 to 20 minutes.
- Remove the chicken with a slotted spoon.
- Heat the water to boiling and add the fruit and ring macaroni or orzo gradually so that the water continues to boil. - Boil, uncovered, stirring occasionally, just until the ring macaroni is tender, about 6 to 8 minutes or 10 minutes for the orzo, then drain.
- Rinse with cold water and drain again.
- Cut the chicken into 1/2-inch pieces and mix with the fruit, macaroni, jicama and onions.
- Mix the remaining ingredients and toss with the chicken mixture.
- Cover and refrigerate until chilled, at least 2 hours.

2. Balsamic Dressing

Ingredients:

- 3/4 cup Water
- 1/4 cup Balsamic vinegar
- 3 teaspoons Capers
- 2 teaspoons Dijon mustard
- 1 1/2 teaspoons Dried basil
- 1 tablespoon Fresh parsley - chopped (opt)

Directions:

- Combine the ingredients.
- Adjust vinegar to taste, since it has a strong flavor.
- Store in a covered container in the refrigerator.

Makes about 1 cup.

Note: If you don't have balsamic vinegar, you may substitute another kind. But, if this be the case, start with water and vinegar in equal proportions.

3. Barbecue Cubes

Ingredients:

- 3 ounces lemon jell-O (1 Pkg.)
- 3/4 cup - boiling water
- 8 ounces tomato sauce (1 can)
- 1 1/2 teaspoons vinegar
- 1/2 teaspoon salt pepper
- 1 tablespoon horseradish

Directions:

- Dissolve Jell-O in boiling water.
- Mix all other ingredients, and when Jell-O is at room temperature, add and mix well.
- Pour into oiled 8-inch square pan.

Chill until firm. Cut into cubes and serve salad to go with your barbecue.

Old Fashion Chicken Recipes - chicken breast roast chicken and macaroni pie and Miz Rowena

Chicken has a family and a favorite chef waiting since our early days. It is sometimes very difficult to improve with the old way of my grandmother's recipes. Here are two chicken recipes from my vintage recipe collection. Roasted chicken breast is a plate of chicken rice. Add a salad or a side dish of vegetables and have a meal. This dish goes together quickly and bake for 2 hours. Put in oven and forget about dinner until just a few minutes before it happens. Casserole Miz Rowena'sis an ideal way for diabetics to enjoy macaroni and cheese.

OVEN chicken breasts

8 chicken breasts
Salt
Pepper
1 can of cream of celery
1 can cream of mushroom soup
1 1 / 4 cups milk
2 cups instant rice
1 / 2 envelope dry onion soup mix

Preheat oven to 325 degrees.

Place chicken, skin-side in a greased oblong baking dish. Season with salt and pepper. In a medium bowl, whisk together both soups, milkand rice. The mixture over the chicken. Sprinkle dry soup mix over the top. Cover pan with aluminum foil and bake at 325 degrees for 2 hours.

MIZ Rowena's MACARONI CHICKEN & Casserole
This recipe is an old newspaper clipping Southern Indiana.

2 to 3 cups diced chicken (or turkey), which has been boiled
2 cups, including elbow macaroni
1 can chicken broth, undiluted
1 can cream of mushroom soup, undiluted
2 cups milk
1 / 2 poundVelveeta cheese, cubed
1st / 2 cup diced onion
4 boiled eggs, optional

Mix all ingredients together in a large bowl with a lid. Cover and refrigerate overnight or at least a half day. Remove from refrigerator 30 minutes before the cooking time. A little 'grease a 9 x 13-inch baking pan or dish. Spoon mixture into the pan and bake in preheated oven at 350 degrees for 1 hour.

Note: modern day advantage: You can melt the cheese in milk in the microwave before mixing theIngredients.

2 skinless, boneless chicken breast half, cut into cubes

1 carrot, cut into 1-inch pieces

1 package (10 oz) frozen broccoli, thawed

2 cloves garlic, minced

12Oz Spaghettini

2 / 3 cup chicken broth

1 teaspoon dried basil

1st / 4 cup grated Parmesan cheese

Yield: 4 servings.

1 tablespoon oil in a medium skillet over medium heat. Add the chicken in hot pan. Cook, stirring, until the chicken is also through. This should be about 5 minutes. Remove from pan and pour over paper towels. The remaining oil in same pan. Put water on the fire to cook the pasta according to package directions.Add the carrots to give the pan and cook, stirring about 4 minutes. Add the broccoli and garlic to give carrots to the pan and cook while stirring for a few minutes.

Tagliatelle. While the noodles cook, chicken broth, basil and parmesan cheese mixture into the pan. Stir until all ingredients to combine. Return the chicken to the pan. Reduce heat and simmer 4 minutes left.

Drain the pasta in a large bowl. Top with chicken and vegetablesMixture. Serve immediately, still warm.

Outback Steakhouse'S ALICE SPRINGS CHICKEN

Ingredients:

Have 1 cup of honey and mustard sauce or some of the best I've ever eaten Honey Mustard
4 skinless, boneless chicken breast half
1 tablespoon vegetable oil
2 cups slicedMushrooms
2 tablespoons butter
Salt and pepper to taste
Paprika
12 slices of bacon, fully cooked
1 cup Monterey Jack Cheese
and
1 cup Cheddar cheese
or
2 cup Mexican blend shredded cheese

Directions:

A team from The Best Honey Mustard You've never tasted. In retrospect, very double - you will love it.
Pour about half of a game or ¼ of a double portion of honey and mustard in a bowl and the chicken. Set in refrigerator to marinatefor 2 hours or, better yet, overnight. Save the honey and mustard, remaining in a sealed container in the 'fridge, as a dip after use.
Oven at 375 F
Heat until the oil in a pan on fire and burn each chicken breast pan for 3-4 minutes per side until golden brown.
Transfer chicken to oven safe pan and brush with honey mustard.
Salt and pepper the breasts.
Add butter to skillet and saute mushrooms.
Stack bacon on each breast, spoon mushrooms on each breast and then about ½ cupCheese on each.
Cover with foil or lid and bake for 7-10 minutes to melt cheese. Dust with paprika and serve with honey mustard.

Chicken Salad Recipes - Chicken Macaroni Salad

Here's a basic recipe chicken salad, which is suitable for lunch, dinner or a potluck meal.

1 7 oz pkg. Creamette elbow macaroni

1 1 / 2 to 2 pounds of chicken

1 small red onion, chopped

1 green pepper

1 stalk celery, chopped

Salt and pepper to taste

2 hard boiled eggs, chopped

Mayonnaise

Frozen Peas

Directions

Cut the vegetables. Cook the pasta and add the frozen peas in the last 3 minutespasta boiling. Drain and rinse with cold water.

Add the vegetables, mayonnaise, pasta and peas then the chicken. With chicken, canned, add water from the can. Insert the end with the rest, so as not to break too. You need to add more mayonnaise, absorbing about 1 to 2 hours later.

If using cooked chicken, onion, celery together until done. Cool cubes of chicken cooked. With salt and salad dressing or mayonnaise. Chopped egg on top. Garnishthe paprika.
