Kid-friendly dinner - macaroni and cheese made with love
Image : http://www.flickr.com
We all do not want a world safe and worry-free for us but for our children - and a healthy diet is a step, so that those dreams come true. Sorry, is being marketed with a lot of food available in the market, the "home made" words lose their meaning with "ready-to-eat and heat up the battle for food mixed with love.
Take, for example, macaroni and cheese. Growing up, I always thought that macaroni and cheese that I bought was more store. My mother never tome - was in a microwave and pop, that, until I learned to do it yourself. So for me, I always thought of branded mac and cheese.
Now that I have my children, I did some research on food I can feed him. To my surprise, there are several recipes on how to do - traditional recipes and some are even hand-me downs.
I tried to be a lot of them, but it must be one of the best I've tried. Because of my aunt (she has learned from hisMother-in-law), this was an instant hit with my children, especially my oldest, who was a very picky eater.
So here's the recipe (with my approval aunt).
Prepare the cheese sauce. Melt margarine in a quarter cup of low heat. Add back a quarter cup of flour and stir. Add 2 cups of milk slowly, stirring constantly. (This is so that there are small lumps of flour and margarine). Stirred further until it is smooth and thickened. Stir constantly so that theAt the bottom does not burn. Remove, take the pan from the heat. Stir in 3 cups of grated cheddar cheese. (Cheddar cheese has more flavor than other places.)
Cook the macaroni (3 cups) in boiling salted water or according to package directions. (If you are using a non-stick pan, a little 'oil so the pasta does not stick to the bottom or sides). Drain and combine with the cheese sauce mix evenly mixed. Add dashes of salt and pepper to taste.Transfer to a plate of 3 liters of cooking fireproof.
With a small separate bowl, 2 tablespoons melted margarine and a cup soft bread crumbs. Sprinkle the dough and bake at 350 degrees for about 30 minutes. When the cheese sauce is bubbly and the sauce a fresh and golden, it just means that it is ready.
Have fun!

Meatloaf and Mac And Cheese
It's been a day that started out with the best of intentions. A day meant for cleaning, organizing, catching up on all those unfinished projects but instead you sat down, just for a minute, to watch a little TV and relax for a moment before getting started. Unfortunately for you and your to do list you stumble across a Planet of the Apes movie marathon. You can kiss the day good bye. Not only are you not going to get any of the chores done, you will not even bother to get out of your pajamas.
A day like this is perfect for a dinner like this one. The earthy mushroom aroma of the meatloaf and the warm nutty scent of the Mac n' Cheese filling your kitchen will make you seem like a hero, like you've worked on it all day. You'll be able to get this started just as you've finished your Escape From The Planet of The Apes and be done and ready to serve in time to catch the grand finale of the Battle for the Planet of the Apes. And some of that procrastination guilt will be alleviated by the praise and thanks you'll receive upon serving this moist, savory meatloaf along side this gooey Mac n' Cheese with its golden crunchy crust.
Meat loaf

8 oz ground beef

Mac n' Cheese
8 oz uncooked rigatoni pasta
8 oz half and half
1 egg yolk
1 table spoon bread crumbs
¼ tsp nutmeg
Salt and pepper TT
8 oz Shredded Swiss cheese

3. Coat a casserole dish with butter to give mac and cheese a golden crust
4. Place a layer of pasta in baking pan.
5. Add a layer of cheese.
6. Continue with alternating layers of pasta and cheese to the top of the baking pan ending with a layer of cheese.
7. Evenly sprinkle breadcrumbs over the top.
8. Bring half and half to a simmer in a small sauce pot.
9. Slowly whisk hot half and half into eggs just a little at a time as not to cook the eggs.
10. Pour this mixture over mac and cheese. This will hold everything together creating a casserole when baked.
11. Place mac and cheese on bottom rack of the oven to achieve a golden crunchy crust. Cook for 30-40 minutes or until top is golden.
If for some reason this doesn't all get finished tonight it can be stored easily in the refrigerator. Slice up the rest of the meat loaf and wrap each piece individually. This way it can be enjoyed as a sandwich later. It is just as good cold as it is warmed up. The mac n cheese is almost better the next day nuked in the microwave by itself or with a meatloaf sandwich.

Macaroni and Cheese, Dressed Up
Image : http://www.flickr.com
I'm not sure I've ever met a child who did not like macaroni and cheese. As a mom, it's a quick and easy lunch or dinner for the kids, but not a personal favorite to serve adults.
Here are several ideas to dress up plain old macaroni and cheese and turn it into a true family meal that even adults will enjoy.
Start from scratch. Home made macaroni and cheese beats the taste of a box and powdered cheese any time. Here's a simple recipe to create your base of macaroni and cheese:
1 package macaroni
1 c. grated Colby Jack cheese
1 c. grated Cheddar cheese
Sprinkle of flour
Boil your macaroni shells until soft. Place in a 9 x 13 inch pan and sprinkle enough flour to lightly cover your shells. Add grated cheeses over top. Cover and bake in 350 degree oven for 1/2 hour. Uncover for the last 5 minutes of baking.
You can add just about anything to this base. You can add ground meat, or ground turkey. You can add cut up hot dogs for the kids. You can add shredded chicken, and of course you can add any veggies you like. To make it simple add the frozen vegetable mixture. There are carrots, peas and corn in the simple mixtures.
Want some crunch for your macaroni and cheese? Add some meat to the mac and cheese and then put the mixture into a taco shell. Top with some lettuce and tomato and you have a very interesting taco.
If you enjoy spicy foods, try adding some spicy sausage to your macaroni and cheese. You can also add half a package of the hot taco seasoning mix for a macaroni and cheese with a kick. You can also add a teaspoon full of hot sauce to the casserole.
Have you ever made a 7 layer dip? Try using hot macaroni and cheese as your base. Then add sliced olives, sliced onions and diced tomatoes on top. Grab some tortilla chips and start dipping.

Creamy Macaroni and Cheese Recipe and a Bit of History
Image : http://www.flickr.com
Though many people believe that Thomas Jefferson created Macaroni and Cheese, because of a rumor that came about when Barbara Bell Matuszewski wrote that Jefferson served the dish in the White House in 1802, which he did in fact, it is not known who created the recipe or whether it was even created there for the first time. Karen Hess, well known food historian, states that Jefferson returned from a trip to France with a macaroni mold but did not create the recipe himself.
There is a recipe for Mac and Cheese in the cookbook, "The Virginia Housewife", however, published in 1824, written by Mary Randolph, who was Jefferson's cousin. Perhaps that is the Mac and Cheese that was made in the mold Jefferson bought in Paris!
Miss Myrtle Martin's Mac N Smack Cheese
Lip Smacking' Good!
Ingredients:
3cups elbow or shell shaped noodles or 3 cups LARGE noodles
3 cups shredded mild or sharp Cheddar cheese
2 cups shredded Monterey Jack cheese
1 8 oz pkg. shredded Colby Cheese
1 8 oz pkg shredded Mozzarella Cheese(for that great stringy texture... can substitute other if desired)
1 8 oz. container of Sour Cream
1 8 oz. carton heavy whipping cream
1 Large or Extra Large (or two small) egg beaten
Salt and Pepper to taste
Paprika to sprinkle on top for garnish
1 cup bread crumbs (preferably homemade, instructions follow)
1tablespoon (T) butter or margarine
(can buy cheeses in blocks and shred or cube to melt in with noodles instead of pre-shredded to possibly save money)
Instructions:
Fill a large spaghetti type pot ¾ full with hot water and bring water to a rapid boil. Salt the water with 1 teaspoon salt, add a couple of drops of olive oil to the water to help prevent boil overs. Add the noodles (into a spaghetti insert if you have one and drop it)into the water and let boil for 15-20 minutes, until al dente to your preference, then drain, saving 1 Tablespoon of the pasta water. Preheat the oven to 375 degrees F. Pour cooked noodles into a 4 quart baking dish which has been sprayed with cooking spray and stir in the pasta water (helps the sauce stick to the pasta) Add sour cream, heavy whipping cream, Cheddar cheese, shredded Monterey Jack, salt, pepper and egg. Mix thoroughly then add the remaining cheeses except the Parmesan and stir. Place into the oven for 10 Min's. Remove from the oven and stir again gently. Sprinkle the mozzarella on top. Combine bread crumbs with melted butter and toss with ¼ cup Parmesan cheese and sprinkle over Mozzarella cheese. Sprinkle paprika over if desired. Place the dish back in the oven at 425 for 20-25 Min's or until top layer of cheese is melted and starting to brown. Remove from the oven, cool for 5 Min's and serve. This recipe serves 8 to 10 people.
Homemade Bread Crumbs:
Always keep a gallon size zippered bag in freezer to drop left-over pieces of bread.
Cut stale bread into 1" cubes. Spray with butter flavor (or whatever flavor you have on hand) cooking spray, sprinkle with dried parsley, oregano and Parmesan cheese.
Put under broiler until dry enough to crumble... watch it carefully! Turn cubes and do the same on the other side. Crumble by putting in food processor or placing in ziploc bag or dish towel and rolling with rolling pin.
Crumbs are now ready for recipe. For croutons, add garlic with the parsley, oregano and cheese, leave as cubes and brown a little more. Great on salads and in soups!
Note:
Sometimes instead of watching portions, it can be more beneficial to cut down some of the less crucial (to the recipe) fats and keep those that really count. These comfort foods can be reshaped to be tasty on the lips while not so detrimental to the hips! The Comfort Food page will be exploring different comfort foods, even those from different regions and countries. Also researched will be alternate ways to cook them and methods to make those recipes healthier.

Hearty Greens With Dried Cranberries, Walnuts, Goat Cheese and Apple Vinaigrette, Apple Topsy Turvey
Image : http://www.flickr.com
Fall apples are appearing in farm stands around here and I had a Macoun while shopping for salad fixings. Tart, sweet, juicy, crunchy and so appley if you know what I mean.
I decided right then that apples would take the spotlight for this month's recipes.
You must know that they are a healthy choice but did you know that apples have the highest level of anitoxidant activity of the most commonly consumed fruits in the US, beaten out only by cranberries? And their high levels of the mineral Boron help with bone health. So this salad combines both superstar fruits in a perfect fall or winter salad.
The dessert is a fun and easy variation of apple pie. You don't have to worry about getting the crust perfect because it's covered in caramel and flipped out of the baking pan.
Hearty Greens Salad Serves 6 - 8
Ingredients
8 cups of torn salad greens. For this I use a combination of escarole, baby arugula, red romaine but use whatever you like as long as it's a sturdy mix.
½ cup dried cranberries
½ cup walnut halves toasted to golden brown or candied
3 oz goat cheese crumbled
Dressing
2 Tablespoons of sweet butter
1 Tablespoons minced shallots
3/4 cup of grated, peeled apple
1/2 cup olive oil
¼ Cup walnut oil
¼ Cup warm water
½ cup of sherry vinegar or apple cider vinegar for a milder flavored dressing
1 teaspoon minced fresh thyme
Salt and black pepper
Method for dressing
1. Heat a medium sized sauté pan over a low flame and add the butter.
2. When it begins to brown add the shallots, stir around and cook for one minute then add the apples.
3. Raise the heat up and cook apples and shallots for about 3 minutes, add the vinegar.
4. Let vinegar bubble up and mix into apple mixture and remove pan from the heat. You don't want to boil all the vinegar off.
5. Cool mixture.
6. Pour cooled mixture into a blender with thyme. Turn on puree or high and slowly drizzle the olive oil in to emulsify.
7. Once everything is emulsified add some s & p to taste. Pulse one last time.
You can refrigerate it at this point or use it warm which I prefer.
Salad Method
1. Put greens, cranberries and walnuts into large bowl.
2. Pour some dressing over and toss. If you need more dressing add it and toss.

Topsy Turvy Apple Pie Serves 8
This recipe comes from one of the Pillsbury Bake Off Best Desserts Books. It's so easy--what I like about these Bake Off books--and really is just killer good. For pies the best apples are Cortlands, Pippins, Romes. Winesaps, or Grannie Smiths.
Ingredients for Glaze and Crust
¼ cup firmly packed brown sugar
1 Tablespoon of butter, melted
1 Tablespoon of maple syrup is what I use but they call for corn syrup
½ cup of pecan halves--optional
1 pack of refrigerated or frozen pie crusts--2 per pack
Filling
1/2 cup + 2 Tablespoons sugar
2 Tablespoons ap flour
½ teaspoon of cinnamon or apple pie spice which I prefer
5 cups peeled and sliced apples-not too thin
Method
Preheat oven to 425°
1. In a small pan combine the butter, brown sugar and maple syrup, mix well and bring to a boil. Remove from the heat.
2. Pour the above mix into a pie pan and arrange the pecans around evenly over the mixture if you are using them.
3. Place one of the pie crusts over this mixture and nestle it in on top snuggly.
4. In a medium sized bowl mix the apples with the spice, sugar and flour. Toss to mix well.
5. Brush the edges of the first crust with water or milk, pour the apple mixture in and top with second pie crust, seal edges and cut some steam holes in the top crust.
6. Place pie on a cookie pan, put in the preheated oven for 10 minutes.
7. Lower temperature to 325° and bake an additional 35 - 45 mimutes or until apples are tender and crust is golden brown.
8. Once you can handle the pan loosen the edges with a small knife and invert the pie onto a platter slightly bigger than it is.
9. Carefully flip the pie over onto the plate or platter and let it rest in this position for about 5 minutes.
10. Carefully pull off the pan and if some apples and crust stick to the bottom just scrape them off with a spatula and place on top.
This is a casual dessert so don't sweat it if it doesn't look perfect. The flavor will wow you I promise.
Be decadent and serve with ice cream or whipped cream if you dare.

Quick Baked Macaroni and Cheese
Image : http://www.flickr.com
Some food combinations ever despise a million different recipes. Macaroni & Cheese is certainly one of them.
So, once again I want to confuse this recipe, easy and quick returns, no joke, do not do, and something that few people can eat in about 90 minutes. And certainly something that will last in the fridge for a couple of days.
Ingredients:
1. A box or a bag of pasta noodles of any shape you like and can spinachwell.
2. 2.5-3 cups of grated cheese - any type you want (or you can get some different mix.)
3. 1 tablespoon olive oil or butter
The tools you need:
1. Pot to cook pasta
2. Sieve - (a metal or plastic container with a perforated bottom for drainage and food self-incrimination.)
3. Oven ready to cook the macaroni and cheese platter
Directions:
1. Cook the noodles in fresh water. (Typically 20 minutes). Remember to put enough water in it so that it covers the macaroni and cook.
2. Take the pot with the macaroni, and pour into colander.
3. Use a tablespoon of olive oil or butter on the bottom of the finished dish in the oven. Cover it completely. (This will not burn and create a crispy crust on the bottom.)
4. Dump the macaroni into the baking dish ready.
5. Use 1/2-1 cup of cheese and mix in> Macaroni.
6. September Sprinkle any remaining cheese so that it covers the top of the macaroni in a clean sheet.
7. Cover the dish with aluminum foil.
8. Turn your oven to about 350 degrees Fahrenheit.
9. Turn the timer to 45 minutes. Check the macaroni. If you want a layer of crunchy, again in another 15 minutes - always with a sheet of aluminum.
10. Crisper? Take a sheet of aluminum and the place in intervals of 5 minutes. KeepThe eye on them so that the top does not burn.
Simply is not much easier than this. They can be very creative by adding other vegetables and spices. But if you want to spend maybe 10 minutes in the kitchen, and while the pasta (macaroni), cooked just do something else and forget the big picture of the kitchen you can do something else, this is the recipe for you.
