Salad solidified

1 package (0.6 g), sugar-free lime flavored gelatin *

2 cups boiling water

13 / 4 cup cold water

1 / 4 cup cider vinegar

1 cup chopped celery

1 cup grated carrot

2 tablespoons finely chopped red bell pepper

2 tablespoons chopped green onion

Vegetable oil cooking spray

Dissolve gelatin in boiling water in a medium bowl. Stir until all the gelatin has dissolved. Stir in cold water and vinegar. Chill until mixture is consistency of unbeaten egg whites. Fold in celery, carrots, peppers and onions. Pour the mixture into a jelly moldThis has been sprayed lightly with vegetable oil. Chill up to the set.

Note: mixture into 8 2/3-cup major forms that have been sprayed with vegetable oil, if desired.

* You can use this recipe with regular gelatin, if you are not interested in the service of sugar.
